Vanilla Pudding Sally McKenney Makes 4 cups 2 and 1/4 cups (540ml) whole milk 1/2 cup (120ml) heavy cream 3/4 cup (150g) granulated sugar 1/4 teaspoon salt 4 large egg yolks 1/4 cup (30g) cornstarch 1 and 1/2 teaspoons pure vanilla extract 3 Tablespoons (43g) unsalted butter, softened to room temperature 1. Combine the milk, heavy cream, sugar, and salt in a medium saucepan over medium heat. Whisk until all the sugar has dissolved, then bring to a gentle simmer, whisking occasionally. 2. Working quickly as the milk mixture begins to simmer, whisk the egg yolks and cornstarch together in a medium heatproof bowl until very thick and smooth. Very slowly stream in about 3/4 cup (180ml) of the simmering milk to slightly warm the egg yolk mixture. Then, in a very slow stream, whisk the egg yolk mixture into the pan. 3. While continuously whisking, cook until the mixture is thick and big bubbles begin bursting at the surface, about 1 minute. Remove the pan from heat and whisk in the vanilla extract and butter. Spiced Rum Whipped Cream 1 cup heavy cream, cold 3 tbsp confectioners sugar, sifted ½ tsp vanilla extract or paste 2 tsp dark rum Pinch sea salt Pinch nutmeg 1. Combine all ingredients in a bowl and use an electric mixer or a large, handheld whisk to whip aggressively until soft peaks form. Taste and adjust flavor to your liking, then continue to whip until medium peaks form. Assembly 4 – 5 ripe bananas, sliced ¼” on bias 1 package Nilla wafers 1. To assemble use a large trifle dish or individual cups to assemble in the following order: pudding, wafer, banana, pudding, wafer banana, pudding, wafer, banana, pudding. Cover well, with the plastic wrap pressed directly to touch the surface of the pudding. Refrigerate for 4 – 12 hours. Before serving, top with whipped cream. More Info below.
